"Pecorino from Crotone" - This firm-textured Pecorino from the region of Crotone in Calabria is an ancient cheese of some renown, and is produced from the milk of the Gentile breed of sheep (one of the great native Italian breeds) and rennet from young goats. Its origins lie in the rich and extensive pastureland that run between the Sila Mountains and the Ionian Sea. Sheep breeding in this region is an activity that dates back to the times of the Ancient Greek settlement in southern Italy. Long-established tradition has led to the production of a golden and flavourful Pecorino with a semi-cooked, compact curd containing a few tiny holes moist with milk fat. The maturing process ranges from 4 months to 2 years.
